We designed this plate one night at dinner in a restaurant. The weather was chill. It was about late March. The restaurant was on the harbour of a little town in Cilento. It wasn’t really full and the sun was making its way to the sunset, slowly descending down to the sea. The golden hour’s light radiated the room, warming the waiter’s face and soul. The deep blue of the sea melted with the sky’s nuances, adorning our view from that little window. Yes, Mare Nostrum was ideated that late afternoon in March.
